Chocolate Zucchini Loaf
A healthier alternative to packaged muffins or banana breads - with hidden fruit and vegge a great one especially for the kids!
Ingredients
1/3 coconut oil, melted
1/4 to 1/2 cup 100% pure maple syrup (to taste)
2 eggs
1 cup grated zucchini, liquid squeezed out
1 banana, mashed
1 tsp baking powder
1.5 tsp bicarbonate soda
1/4 tsp salt
1/4 cup dairy free milk (e.g. Almond Milk)
1/2 cup raw cacao powder
3/4 cup almond meal
1 cup gluten free flour (e.g. Buckwheat)
Method
Preheat oven to 160 degrees celsius and grease a loaf tin.
In a large bowl, whisk the coconut oil and maple syrup together. Add the eggs and whisk to combine.
Add zucchini, banana, milk, baking soda, bicarbonate soda, salt and stir to combine.
Add flour, almond meal and cacao powder and stir through to combine. If mixture is too dry you add some extra milk.
Pour batter into a loaf tin and bake for 50-60 minutes until cooked through.
