Healthy White Christmas
Refined Sugar Free - Gluten Free - Dairy Free | A classic Christmas treat with a healthy spin!
Ingredients
1.5 cups coconut butter (see notes below)
1 cup coconut oil, melted/cooled slightly
1 tsp vanilla essence
1-2 tablespoons rice malt syrup
1 cup pistachios
1 cup dried cranberries or goji berries
3/4 cup rice puffs (optional, see notes)
Optional extras: raw cacao nibs
Method
Place coconut butter, oil, vanilla and rice malt syrup in a food processor or blender and combine well. Then stir through the remaining ingredients. Line a baking tray with baking paper and spread the mixture out. You can make it thin like a bark or slightly thicker for more of a slice. Then set in the freezer for about 30-60 minutes. Simply break up or chop into pieces. Store in the freezer.
Coconut Butter
You can buy this at speciality or health food stores or if you have a Thermomix or high-speed blender you can make your own by adding 500g desiccated coconut to the blender on high speed for 1-2 minutes.
Rice Puffs
I use the Freedom Foods Rice Puffs, you can also use Brown Rice Puffs which you can find at health food stores. Adding the puffs makes it more into a slice than a bark. You might need to adjust the amount of coconut oil depending on how many puffs you add.
Flavour options
I played around with a couple of options like:
* Rice puffs, cranberries and pistachios - so delicious and kids enjoy this one more!
* Goji, pistachio and raw cacao nib bark - so more of like a white chocolate bark for the adults and less sweet option.
