Cookie Dough Protein Balls
Gluten Free - Refined Sugar Free - High Protein - Dairy Free option
Ingredients
2 cups blanched almond meal
1 cup protein powder (see notes below)
Pinch of sea salt
1/2 cup almond butter, melted and cooled
1/4 cup coconut oil, melted and cooled
4 tablespoons 100% pure maple syrup
1/4 cup unsweetened almond milk or milk of choice
2 tsp vanilla essence
1/4 cup raw cacao nibs
Method
Melt down and cool the almond butter and coconut oil together in a pot. In a large bowl place the almond meal, protein powder, sea salt and stir gently to combine. Add in the wet ingredients and stir to combine. Stir through the cacao nibs. The mixture should stick together in clumps, not too dry to stick but not too wet. You can adjust the consistency slightly by adding more almond meal or coconut oil if needed.
Using wet hands, roll a large spoonful of the mixture into a ball. Place in freezer to set. I recommend storing these in the freezer in a container.
Protein Powders
I recommend using a vegan protein powder to keep these dairy free, however if you have a good quality whey protein powder or collagen powder, you can also use these. The collagen may change the consistency.
