Chicken Mince Stir Fry
Quick & Easy Healthy Meal - High Protein - High Fibre
Ingredients
500g Chicken Mince
400g Mixed Greens: 1 x bag Woolworths Stir Fry Super Greens Mix (250g) + add any extra greens like 1 chopped zucchini or chopped Broccolini for example
2 eggs, whisked in a bowl
Coconut Oil
Tamari Sauce
1.5 cups cooked Basmati Rice
Siracha sauce to serve (optional)
Method
Add coconut oil to a hot frypan, then add chicken mince breaking up with a wooden spoon and cook gently throughout. Just as the chicken mince is cooking through, add the green vegetables and stir through until just tender. Add the eggs to the stir fry and stir through until cooked. Option to add your cooked basmati rice to the dish now and add extra tamari sauce if needed. Or can serve that at the end. Serve into bowls with optional siracha sauce on top.

Protein per serve: approx. 30g
Kids Version
Once the chicken mince is cooked through, remove the kids portion from the pan. Heat another pan over high heat and sauté their favourite greens like Broccolini, Zucchini to serve on a plate with the chicken mince and some basmati rice. Alternatively, you can cook their portion of chicken mince in a seperate pan adding an egg as well for extra protein. And serve on a plate with rice and their favourite fresh vegetable sticks for fibre!
